What distinguishes coniferous honeydew honey is its characteristic smell reminding of conifer needles or resin. Its taste is similar. When it is kept in a room temperature it easily crystalizes and delaminates into an upper part – liquid and a lower part – solid.
Deciduous honeydew honey is brown but it is usually brighter than coniferous one. This type of honey tastes sweet but it has a hint of bitterness.
