Linden honey is characterised by its colour ranging from very bright, almost white to amber with a greenish shade depending on the admixture of honeydew, which often accompanies this kind of honey. The smell of linden honey is very strong and the taste is slightly bitter. At room temperature of about 20 degrees, it crystallizes in a few weeks.
